Last night, I was honored to be joined by six members of our Denver team, as we cashed in our TPR volunteer hours to spend the evening cooking up a delicious winter meal for the children and families of Brent’s Place. Brent’s Place is the only Children's Hospital Colorado approved “Safe-Clean” housing facility for immune compromised patients and their families, and provides a living environment that is essential to healing and recovery. We were able to provide a home cooked meal for thirty-three residents that consisted of some of our favorites including chili, cornbread and s’mores brownies! Quick and Easy Chili
Ingredients 1 yellow onion, small dice 1 green pepper, small dice 2 cloves garlic, minced 1.5 lb. ground beef (can be substituted with ground turkey for lower calories) 1 28 oz. can tomato sauce 1 15 oz. can tomato sauce 1 28 oz. can petite diced tomato 1 15 oz. can petite diced tomato 2 15 oz. cans of kidney beans, rinsed Chili powder to taste
Cooking instructions Sautee the onion and green pepper until soft on medium high heat, season with salt and pepper. Add the garlic and stir for one minute. Add the ground beef and cook until no longer pink in the center, again season with salt and pepper. Pour in all the diced tomatoes and tomato sauce and sprinkle with chili powder to taste. I start with about 2 TBSP and go from there. Bring to a boil and then let simmer for about 20 minutes. Add the kidney beans and heat until warm.
